Sounds good.
I like cold meat and tell myself that I should eat more salads in this climate but somehow it doesn't happen, probably mental inertia from old days.

I tried a Rump steak tonight from Coles.
$36.66 per kilo.
2 pieces in a 300g pack for $11.00

It could have been a little more tender.
I suppose you have to buy their Eye Fillet for that?
Still - it tasted good.

I can make a blade roast into steaks as good or better then Eye Fillet using sous vide technique.

sous vide?

I can't follow what he's done.
I don't like salt over my food like that.
What temperature was the water?

I know a good marinade for steak when you make a curry:
Cut the steak into cubes and grate raw onion onto it.
Roll it around so that the onion touches all sides of each piece of steak.
Leave in the fridge between 3 and 12 hours.
Remove most of the marinade and use the steak in your curry.
The meat will be super tender.

Another one is for when you make Beef Burgundy stew:
Soak the steak pieces in red wine and grated onion.
Leave for 3 hours in the fridge before using in your stew.

Another one is for herrings or sardines used for a salad:
Soak the raw cleaned fish in white or balsamic vinegar -
add garlic if you want - for an hour and serve raw and cold.
The vinegar will have cooked the fish without any heat.

Blade steak at different times and temperatures.

Salt, pepper, etc. are optional, I use on beef very little salt myself.
