Thanks - it was rolled in flour before cooking so yes it was crispy.

No, never roll in flour, just dab skin dry with paper towling, then salt it.
And always cook skin side down first on high for 3 mins or 4 if a larger portion.
3 mins either side is how it's done.

And buy a large bottle of lite olive oil. It's all you need.
Keep your extra virgin olive oil for dressings and drizzling dips etc.
Lite olive oil is milder in flavour is neutral and perfect for all shallow frying and cooking in general
