We are usually in bed asleep by 9 anyway, even though I wake during the night due to RA pain and stiffness.

Ahh - but that was fresh lamb -
seared each side on high temp and then cut into slices and
turned over on to each red side and seared again -
just cooked through before serving - still had lots of taste.

Admittedly, mine was a tad dry, likely the defrosting process and the fact that I should have cooked it in a seperate pan, then melded it together towards the end, but it was tender enough, and an easy week-night meal. Filled the hole.
