Dinner tonight.
Braised lamb with egg, veges and rice - with light soy sauce.
Yummo. Would that have been good enough for any of youse guys?

Make a slit from the end into a pork medallion or other thick small cut, making a pocket, ( like a pita bread, but smaller) and simply stuff it and mallet the end, neatly.
If you want to be precise, you can sew it with cotton thread, but use a dark colour so you can easily see it to remove it after cooking. Butchers use fancy thread, proper stuff, but honestly, regular cotton and a large needle works fine, once it's cooked, it's easily removed.
Just don't use nylon/plastic thread, might melt.
You can use a variety of stuffings, cheese, diced tomatoes, anything you fancy really. It's so easy, and it looks nice and appetising.
It's also the secret to never boring chicken breasts.

Try , spinach and ricotta or other soft malubal cheese, even herbs and cheese or pumkin and cheese with sage.

Probably my fave atm is leftover risotto with a nice soft cheese, and it turns a dull piece of meat into something amazing.

Pork with sage cranberry and apple + breadcrumbs ( the Japanese ones, not regular breadcrumbs)

I think the best fillings often come when you use whatever you have handy, from garden or fridge.

Dandelion weeds, toasted pinenuts , and ricotta even.

I am going to think about what I'm going to do with my.lamb leg steak fillets and will get back to you.

I have too many ideas as usual and I will need to decide.

Whatever it is, it needs to be a one pot/tray wonder because it's a dance night, so no mucking about.

I need some inspiration so will go through my fridge and raid the garden.

I just donated several large bags of oranges and lemons to my eldest daughters charity, and might consider something citrusy and woodsy herbaceous... like orange and rosemary.
Whatever it is, it'll be a one tray wonder.
Or lemon/ mint ..

My daughter dances tonight ( 3.5 hours) and needs something to sustain her so we eat very early.

A very simple one pan dance night meal, no bells or whistles ( I don't do fancy these days, she likes simple meals ) so unless I'm preparing meals for family or friends gatherings, our meals are very very basic.

Apologies if my pics of food are hard on the eyeballs, if someone would like to remind me how to upload them directly onto here, I'll happily oblige.
I just figured that this isn't so bad, because if you'd rather not look, then you can avoid some of my weeknight one pan wonders vrs blunders if you like. 😄

Tonight's basically cooked itself.... just lamb, spuds, peas and herbs+ lemons.
A humble trusty tray-bake!

Just add smaller veg like peas at the end.

You could of course do this or something like it with a variety of cuts of meat, and veg, so basic and best of all, the dishwasher won't require reloading until tomorrow night.

Another late dance night for my littlest chicken, so another simple one for us.

Pork steaks with both cranberry and apple sauces, mashed potato and pumkin, and cabbage and peas.

Yep, this sounds utterly dull, but this is what she likes, so I'm not complaining.

It's easier than fancy , so ....

We are both fine with it. 😊

It's not ready yet, will post pic when I plate it up a bit later on.

Oh, and definitely bubble and squeak for breakfast, I always make extra veg for this purpose
