Mirandas Special Mince
500g of high grade beef mince
1 finely diced onion
2 medium carrots peeled then finely diced
3 stalks of celery finely diced
Half a medium sweet potato peeled and finely diced
A medium zucchini finely diced
3/4 cups of canned corn kernels
2 small or one medium parsnips (white carrots) finely diced
(by the way.... finely dice all veg about 1cm square)
2 long sprigs or 4 short-medium sprigs of rosemary rinsed then roughly chopped.
1 packet of continental rich beef savoury mince (has to be continental), or use their shepherd's pie meal base.
Method...
Brown mince well, then add some seasoning, optional.
(seasoning = about 20 grinds of black pepper, 10 of rock sea salt, and a good pinch of raw sugar)
Again...it's optional....
Then add veg and chopped rosemary , and stir fry until veg has began to soften.
The rosemary, celery and parsnip is very important in this recipe. Gives it it's special flavour.
Sprinkle over continental meal base.... then add water and stir until desired consistency is achieved...(much more water than is suggested on the packet is required)... then pop a lid on and simmer gently while your pasta is cooking.
I use extra-large ribbed tubular pasta I purchase from our local fruit barn, but any large pasta will do.
When the pasta is cooked, add a dollop of butter/marg and some chopped parsley to the pasta....serve the savoury mince on top.
This recipe is a homely satisfying meal kids and adults love.
A great way of sneaking veggies into a meal without them realising.
Tip- I dice my veg and add onion and rosemary + seasoning to the veg mix into a bowl and cover with cling film then pop it into the fridge when my tot goes down for her late morning nap (around 11am) so I can throw this meal together quickly of an evening.
