Tue we will hold our practice session at Monarto, where we hold the trials. Gonna make a cheesecake Monday evening as my contribution, a thank you to instructors/judges/tracklayers etc etc. Got some choc-macadamia dip that I will put on the bottom of the ringform.
Basically, soften a kilo Neufchatel cheese, add 4 eggs, punnet mascarpone, some vanilla extract or almond essence, mix well, pour into spring form, put into preheated 180°C oven for 60 mins. Leave oven door shut and turn heat off. leave cake in oven for a few hours/overnight—the slow cooling will stop the cake cracking. Will spread whippped cream over and decorate with luscious strawberries soaked in lemon juice and sprinkled with a little sugar—luscious, soft, juicy, hmmmmm. Melt a bit of redcurrant jelly and pour over the fruit, makes it look very glossy.
