It must be dinner time (unless of course everyone has been banned).
Any way what's for dinner tonight?
Chicken parmiguana and roast vegies was on the menu with some white wine - very tasty indeed.

Roast pork tonight. Made a nice rosemary and red wine jus to accompany.

250ml decent dry red wine (I used a Rosemount 2009 cabernet merlot)
250ml chicken stock
2 garlic cloves, crushed
1 large sprig of rosemary

Add all ingredients to a small saucepan and gently simmer until liquid has reduced by half. You might want to add a small sprinkle of sugar (I do). Drizzle over meat and enjoy the aromatic, tangy flavour 8-)

Didn't get round to making the sweet potato pie for dessert :(

Give y'all some of that hillbilly hospitality beside my Queensland swamp :D (don't worry, wet seasons over and the mozzies are nearly all gone)

This kicks butt...........

JAMAICAN SWEET POTATO PUDDING

700g sweet potato, peeled and coarsely grated
2/3 cup brown sugar
1 cup coconut cream
1/2 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
few drops pure vanilla
20g butter, melted
1/2 cup seeded raisins (really, really optional. Do you like raisins? I hate the things, they look like rabbit shit for starters)
3 eggs


Preheat oven to 180c and a butter a 1.5 litre gratin dish. Mix all ingredients to make a batter of dropping consistency. Spoon batter into prepared dish and bake for 1 hour. Serve with thick cream or thick coconut cream ( I prefer vanilla icecream).

Notes:

* I used a 1 inch long piece of fresh ginger, finely grated.
* I also added 1/4 tsp ground star anise
* I also used a full tsp ground cinnamon
* I used 2/3 cup of golden syrup in place of brown sugar
* I find that with a fan-forced oven, 45 minutes is plenty, need to check it before an hour or it's likely to burn on top.


This is a pudding, not a pie. It has a texture somewhat similar to rice pudding which some people aren't fussed on. But the flavour...... ohh yeah!!!

Yeah, I'm pretty happy with how that turned out. It's good as a kind of a slice without shortcrust pastry (did that when I made far too much for the pie crust) though you have to be careful when cutting a piece because it's really soft.
