I have a very jealous spoilt cat, you should have seen him tonight, howling at family writhing for my attention whenever one of them were hugging or talking to me, especially my ex- husband lol, shame on me for having family over for Mothers day dinner.

He's curled up on my stomach now as I write this, apparently it was his bed time, and I was taking too long to go to bed.

No, Mr O has the most subservient mistress in the world. :gup

I'm a sucker and always end up giving in to him, he was supposed to embark upon a 48 hour fast, ( under Vets request to diversify his diet) and so I caved in at about 4 hours into it. :roll

Now, I door dash him roast chicken and eat the tin sardines myself.

Dinner tonight = lamb shanks + roast veg , potatoes, sweet potato, pumpkin, beans, mint sauce ( fountain ) and gravy.

Just basic food.

Back in 20....need 1to pop it in my oven ready for the afternoon rush. My daughter’s dance classes start at 4 and she likes to have dinner first and a snack/ dessert afterwards.
Usually a hot chocolate on cold nights.

Often she has a nibble of dinner, and then finishes it after dance.

She dances 4 nights a week, so.... I just make it available, sometimes she she'll have it afterwards.

Depending on what she's had for lunch. Light/heavy

Most of her dance classes go for 3.5 hour's but not today's a short day, so she'll be back by 6pm.

She may just decide to have it afterwards because she had a hot lunch.

I've learnt to be ready for anything with active growing kids so if she wants it straight after school, she can.

Oh yeah, not sure if I mentioned it, but Miss M is her dance schools youngest ever junior dance teacher now too. She teaches Primary ballet and gets a certificate presented to her at her Christmas concert which can become the first ever qual.
She also gets a dance- fees discount. Well, I get the discount lol

She wants to add another style to her repitour, so it's come at a handy time.

They normally offer it to teenagers, like 16+ so she's very proud of herself and grateful to have been given this opportunity. It's only an extra 45mins per week so...
She's not even a teenager yet and is already learning how to teach.

Most of these student teachers end up teaching classes whilst they are studying in grade 10 to 12 + uni to earn a few $$

She's looking towards a career in either science or writing + politics, but it doesn't hurt to keep fit and still actively compete in dance eisteddfods , doing something you love while studying to get there.

She'd actually make a thumping good professional dancer or dance teacher, but she also has more intellectual pursuits so...

I don't think a 12 year old really knows what they want to be and this is how it should be.

And last night I made upside-down riggatoni pasta with beef Bolognase sauce. I use just one pan!!!
The 4 cheese mix ( 4 types of different grated cheese- Coles sells it) is the crowning jewel with this dish because the cheese gets all crisp through the pasta.... the sauce is underneath.

Done in 15 mins tops! 😌

When it's served, it ends up being the right way up, is no longer upside-down.

I call it upside-down pasta, everyone loves it more than the traditional.

Unsure if anyone else has invented it prior to me, I created it because I don't enjoy stacking the dishwasher, or hand washing pots, tomato based sauces are the worst for dish washers, so need to hand wash anything that has had the sauce on it. Pain in the but.

So I created upside-down pasta to make life easier for myself.

If you'd like the recipe, feel free to ask.

I used this same Scan Pan to make pasta + sauce and am even roasting our shanks and veg in it tonight because it's so much faster.
Potatoes get especially crispy too , same with other veg and shanks.

I just zap the Greens on steam in microwave and it's all done.

Sounds like some version of navy pasta.

Gravy will be made in a flash with traditional gravox, and it's all done in one pan that I will put on top shelf of my dishwasher afterwards, along with two dinner plates and cutlery.

Too easy.


But it has to be a Scan Pan, others will burn food, 🔥

This photo doesn't do it justice, the cheese is stringy through the pasta, and crispy golden on the bottom.

It's really good.
