Hey TLD, if you've been involved in the fishing industry along the east coast of Australia, there's a good chance you would have heard of or known my grandfather, Ron Ible. He commercially fished along the NSW coast, and his son, Ron Jr ( my uncle) continues the family business.

I think this is why I've always loved fishing, I am one of those wierdos who can sit for hours fishing, without so much as a nibble , and never get bored.

Not so sure about my daughter though, will take her to our secret lake and see how she goes.
I've never been an enthusiast when it comes to freshwater fishing ( had yuck experience in Sydney re- the trout farm) so didn't even consider eating freshwater fish after that.

But I'm thinking that I should give it a go, it's Lake Esmond , Ballarats other lake we keep to ourselves, but plenty of fisherman know about it, as they hold an annual competition there of sorts and people come from all over the place to have a go.

I did not work in or for fishing industry only help sometime my mates from local fish coop.

Yessss, and DEFINITELY pasta, that would be amazing because you'd get the umami, salty taste of the see, with each punchy bite, I'd add calamari and fennel springs, yummy, you are making me hungry lol.

I would definitely give dried mullet ( from ocean) roe a crack. But please don't try to persuade me to eat mullet from Hawkesburry river, even lower river .... cos I've seen what comes out of those bad boys and it isn't appetising. Looks like a combination of sump oil with slime.

You must have read my mind, because we are having tortellini tonight, ricotta & spinach. Will serve with a side salad and my amazing garlic bread. ☺

Oh and when it comes to Italian, this is the grandfather of all food Italian. Every Italian recipe I use is HIS.

He knows his stuff, he's a no nonsense proper Italian chef.

Tip- make double or tripple batch because they freeze really well and are an excellent standby when you just can't be stuffed cooking from scratch like me today.

When you freeze them, freeze them on an oven tray first then place tortellini in zip lock bag before returning to freezer.

Thaw the same way, on oven tray, so they don't lose their shape or stick together.

Note- you can do them in any shape you want.
