Not a fan of mullet myself, I used to catch them often in the Hawkesburry river, cat fish too unfortunately, we'd use mullet in crab pots, mud crabs love'em.
Who even eats mullet, they're full of blood, they need to be blooded to eat.
Perhaps ocean caught mullet is different to estuary or river mullet?

I knew there was another reason, this is an old article, however it's just as relevant today as it was when it was written.
Not only are mullet full of blood, they're an oily strong tasting fish too and unfortunately, despite their wonderful nutritional benefits they store nasty heavy metals and contaminants also.
I was roughly 10 when I caught my first mullet, quite by accident I had been experimenting with floats and various baits ( as bored kids do) and it virtually jumped on my hook straight away.
My father said, throw it back, you don't want muddy mullet, but later on a few other people said they're great for crabbing because they don't fall apart easily in the crab pots, and the heads are perfect.
Anyway, we used mullet for crabbing from there on.

It's an incredible catch though, and with just a couple of men and a drag net?

What will they do with all that mullet, is unlikely to sell at the markets, people buy them for crabbing or deeper water fishing though.

It's why they're so cheap.

To eat them, they need to be blooded, ( hung up) practically as soon as they're caught.

Even then, they're gross I believe. Too strong tasting, and the meats dark red.

I was taught to throw them back or use them as bait. Their diet and the manner in which they feed speaks for itself.
Like eels, cat-fish etc...

There are different types of mullet in both fresh and salt water. Fresh water is good for sport while salt water or bully mullet is good for table.
Like other types of river fish can be eaten too if you modify flavor by brine and cooking methods like curry or stewing or hot smoking with scented woods (my favorite).
Like they do in Florida.

BTW, salted and sun dried mullet roe isn't called seafood gold for nothing, I used to do it before Asian buyers took over Australian mullet roe supply.

Well ok then, but there's no way I'd consider eating mullet from estuaries or rivers, I've seen the muck in their stomachs when gutting them.... crabs like them because their strong oily odour carrys. . It attracts them to the pot.

I would give that mullet roe a crack, it looks like something that could work if shaved into a seafood risotto.
