Only two senses are blocked sight and hearing but smell, taste, and touch are not.
Gravity isn't blocked either so sense of spatial orientation is still present.

But does the person become aware of their other senses amplified, like a deaf person being more visually aware of a blind person more audio aware??
Or do they focus, with fear, on the sense that they have lost?

Have you ever experienced Blue Water vertigo Tallo?
Where all around you is blue water (when diving) with very minimal gravity feeling, nothing visually to lock onto...
only the direction of your bubbles towards an unseen surface 40m away.

Depends on a person and training. It used to be training routine for submariners in cosmonauts with addition of rotating you in 3D swivel chair, then all of a sudden flashing colour light and cacophony of sounds would come on and you have to quickly find control panel and click dozen switches in correct sequence.

When in navy I did night dives with close circuit breather, no bubbles but I used a divers knife to find up and down.

Training would help sensory discipline.
As for the knife trick, I haven't heard of that one before.
