Healthy Winter Eating Ideas
We're mainly eating legumes and lots of veges. Freshly made thick hearty stews.
For tonight I made pea and ham soup/stew. Yummy

I have an easy dish that tastes pretty damn good and is healthy.
In a casserole layer potato nearly cooked on the bottom. (The potato is cut up, sliced is good for this.)
Wilt spinach or chard very quickly, whizz in food processor. This goes on top of the potato. Plenty freshly grated nutmeg on the spinach.
Crack an eggâchicken or duckâonto the spinach.
Cover thickly with freshly grated cheese (mix cheddar and parmesan works well
Into 180°C preheated oven for 35-40 minutes.
Filling and healthy.
Working on a more elaborate version:
Fry some lamb mince in oil or butter and some tomato sauce (a sachet pizza base is good) That goes on top of the spinach. Salt and pepper as you like.
Secondly, either make a very cheesy bechamel or just cover the mince with cheese.
Tried one version of thisâYUM!
Where I am staying a while cooking facilities are limitedâeverything is packed up so I am using bought pre-grated cheese, the shame!

Damn, I forgot to buy a pizza tray and a roasting dish. Think I will head to a Westfield tomorrow.
Bought a pizza from a local winery last Fri I think. Was OK but ferocious fire in the pizza oven meant it was a tad on the dry and crispy side.
Feeling like a simple pizza with cherry tomatoes, mebbe some anchovy and olive and herbs. With buffalo mozzarella will make a nice, simple pizza.
Emphasis will be on simple for a while.

Hache is a sort of stew I suppose. Rode kool is red cabbage. Skirt steak was what Mum liked to use but blade etc can be used. It does cook for a while. Good winter food. Mum used cloves and peppercorns I think. Bloody Dutch cookbook is probably packed away, dammit but maybe not. I was at the old house today but it was unpleasantâbare and clammy from no heating in winter that I didnât stay long. Dutch cookbook could be there.

Croquettes are nice but maybe not so healthy. We would make a batch most winters, a chicken batch and a salmon batch. Lovely with some grain mustard!
