The radiator cap serves three basic purposes
It keeps the fluid in
It allows the water to become pressurised
And it's a blow off valve should it become over-pressurised.

Basic physics (applied) means that under pressure, water has a higher boiling point.
Sufficient to allow vehicles to run hotter, and more efficiently, while still maintaining a means by which to allow excess heat to be taken from the motor.
