I found this on the net the other day and made it today. Really nice if you like a crumble topping, which we do! I used Self Raising Flour for the cake because I didn't have any Baking Powder and I didn't use the Almond Extract.
I also didn't have a 9" x 9" pan handy so I cooked it in a 9" x 11" baking pan for 30 mins.
Blueberry Crumble Teacake
Cake
1 and 3/4 cups all-purpose flour
1 and 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup milk
1 cup fresh blueberries
1 Tablespoons all-purpose flour
Crumble Topping
1/4 cup butter, room temperature and chopped into small pieces
1/4 cup brown sugar
1/2 cup flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup sliced almonds
To prepare cake
Preheat oven to 350*F and line a 9"x 9" cake pan with parchment paper (or lightly grease with butter).
In a medium bowl, whisk the flour, baking powder and salt, and set aside.
In the bowl of an electric mixer, blend together the butter and sugar until light and fluffy and fully combined.
Add eggs, vanilla and almond extracts. Mix until well combined.
While slowly mixing, add flour mixture and milk in two batches (some flour, then some milk, then the rest of the flour and the rest of the milk). Stop mixing as soon as it's just combined.
Rinse off the blueberries so they have just a bit of moisture on them, then, in a small bowl toss the blueberries and 1 T. flour. This flour coating will help prevent the blueberries from sinking to the bottom of your cake while baking.
Add the flour coated berries to the batter and gently but quickly stir, by hand, to combine.
Pour batter into pan and gently smooth until level
To prepare crumble
Add chopped butter to a medium bowl, then add brown sugar, flour, cinnamon and salt.
Use a pastry blender, or a fork to break the butter into even smaller pieces, while combining with other ingredients. Mix until ingredients are combined and crumbly, and no large chunks of butter remain.
Add sliced almonds to crumble, stir, and then sprinkle crumble evenly over cake batter.
Bake cake in pre-heated oven for 40-45 minutes, or until a toothpick inserted in the centre comes out clean, or with a few moist crumbs.

Breakfast
2-googie eggs and bowl of blueberry instant porridge.
She leaves the egg whites, only eats the yolks. Lol
Must have.....
-special spoon, egg cup, plate and pink fairy rock salt.
Me----- Isowhey banana shake and a cup of tea.

My mum's recipe is incredible, re-yorkshire puds.
So simple, but nothing beats them.
Thanks for reminding me to get the recipe back off her.
I had it, but left a lot of my cook books and sheets of paper with recipes behind when we left Melbourne.

I do very simple one . 1 cup of flour 1 cup of eggs and 1 cup of milk , a little salt and pepper give it a good beating let it sit for an hour .then into a hot ovenmellie wrote:My mum's recipe is incredible, re-yorkshire puds.

this works... 1 large tablespoon p.flour. 1 largish egg salt I put pepper in...milk and water to make it like thin cream...leave for at least an hour
place in hot fat. in hot oven 15 min..I use a 6 muffin tin... only makes about 6...
i cup of eggs sounds a lot Big P......I have even put them in the over with lumps comes out great...just got to get the balance right I think and that HOT fat is so important..
