Mushroom & mascarppne pizza bianca
Pizza dough
100g mascarpone
50g pecorina pepata shaved (use potato peeler)
150g thinly sliced field or portabella mushrooms
Garlic, lemon & thyme oil
2cloves garlic, thinly sliced
1tbs finely grated lemon rind
1 tbsp thyme leaves
2tsp lemon juice
60ml EVOO
In a mortar place garlic, lemon rind, thyme & 2tsp salt & pound to a paste. Stir in juice & EVOO, season with salt & pepper to taste.
Roll out a quarter of the dough 25cm round and spread with 1/4 of the mascarpone. scatter with pecorino, mushrooms and drizzle with a bit of the garlic/thyme/lemon oil. Put on pizza stone in 250C oven for 10 minutes or until golden. Repeat until all dough used.

Sounds yum, mind if I pinch this recipe? Do you use a woodfire, charcoal or gas oven? Pizza from a charcoal or woodfire oven......oh yeah there's nothing quite it (Celetina is now drooling Homer Simpson-style).

I use a plain old gas oven, put pizza stone in, turn oven on HOT, let preheat.
Make up pizza on pizza tray, put tray on stone--not what a purist would like but I don't end up with half my toppings on the bottom of the oven and the stone still gives that crisp, dry base!

doing the pizza bianca thing again, plus a seafood one with 4 huge prawns, 4 sardine fillets and a atlantic trout tail cut into four. Using pine mushrooms for the pizza bianca.
bought a heap of tiny roma tomatoes, going to cut them in half lengthways, lightly sprinkle with sugar & let stand then add salt & fresh ground black pepper, evoo and li'l bit basil for a wicked salad!

Had a light day and made pumpkin, rosemary and orange soup.
The better I get to know people, the more I find myself loving dogs.
