I love the peel in marmalade! It should offer some resistance to the teeth, not mushy.

The blood orange marmalade has quite a bit of cinnamon it. Next year will replace that with ground allspice and some ground cardamom.

I doubt I will get good blood oranges next winter: they need just the right difference between day and night temperatures and this year was a great year for blood oranges.
