I like cooking cheap steak. Cooking expensive steak, you should always end up with something pretty good.
It does not really reflect the chefs ability. Cooking cheap steak reflects on the chef more.
It is never going to be as good as an Eye Fillet but it can be pretty good.
Depending on what is best to buy and what I feel like I ......
1/ Trim off the fat and gristle
2/ Tenderise it with the base of a solid coffee mug. Not big thumps, moreso many small taps concentrating on the harder areas.
Holding the mug by the shell, not the handle.
3/ Put the saute pan on the element, up to high. Put the lid on it.
4/ Squeeze a 1/2 lemon or passionfruit if the vine is producing on that day onto the steak.
5/ Add some spices to suit. There is no magic here. Experiment have fun. Tenderise the spices and lemon juice into the steak a bit.
6/ Let the steak get to room temp as you cut up onion, mushrooms .
7/ Swish the steak and spice mix around in the glass mixing bowl. Admire it.
7/ The pan is too hot, take it off the heat. Swear.
8/Finish the onion, ok, do a bit of garlic too
9/Put the pan back on the heat.
Now comes the tricky part.
