The fishcakes were cooked in my new thermostaitically controlled deepfryer. Should have got one years ago, so easy, place food in the little wire basket, place into hot oil, when cooked take basket out the oil, shake to get rid of oil, empty onto plate or paper towel. All cooked evenly, oil always at right temp, great mate!
Cooked chips in it last night, fantastic! Even the last chip was still crisp & crunchy!
Next weekend want to cook spring rolls or similar (wontons etc.) Anyone have any fave recipes?

Cardamom and chicken omelette cake (frittata)
Ingredients:
6 eggs
3 cups potato, cooked and diced
1.5 cups chicken, cooked & flaked (I poached a chicken tit in water, bay leaf, peppercorns and thyme)
1 tbsp cardamon seeds, crushed
6 cardamon pods, crushed
1 tsp salt
1 tsp grated black pepper
0.5 tsp fresh chili, chopped
1 tbsp EVOO
2tbsp chopped cilantro
Whisk eggs and add spuds, chook, cardamom, salt, pepper and chili. Mix well,. Heat the oil in a fry pan, add egg mix and cook xlowly, 10-15 min until almost set. Brown top under a grill. Serve with coriander leaves.
Bloody yummy!
