Food Thread

Cooked a flathead last night, using a Thai recipe.

Thinly sliced 2 medium-hot red chilies
Very finely grated a good chunk of fresh ginger (really fresh, no bark and had some pink spots on it)
Very finely chopped two nice big cloves of garlic
Very finely chopped a couple of scallions

Put that in a ceramic bowl (i.e. non-metal) and mixed it into a paste with
2tbsp Chinese rice wine
2tbsp thai fish sauce
juice of 1 lime

Got the fish, washed, patted dry. Scored the skin heaps, spread the spice paste and rubbed into the slits in the skin

I put it in a banana leaf grown by Alcoa and (should have put it in a wok, I used a fish kettle) put on a rack in a wok and put in fair bit boiling water so banana leaf is partly in the water: keep water boiling for 10-15 minutes until fish is done. (Cooked the beans & 4 nice thick asparagus stalks separately so both were still crisp.

Fucking delicious!

Not a beetroot in sight!

sounds delicious monk..

And my recession burger does not have any beetroot in it..thats was hebes version.

I think the recession burger would be just meat and basic salad..lettuce and tomatoe pickles & mustard and sauce. I dont like beetroot on a burger but I do love beetroot.

That does sound like guud fish eaten.

My father, being an Aussie, always ate beetroot on his burger, IN AMERICA!

I swear the man carried cans of beetroot around with him to Aussiefy his burgers.

I used to think him mad, but since his death I usually try to have a beetroot in my burger.
