pounded 8 fresh green jalapeno chilis, cilantro, heap of ginger, kaffir lime leaves and thai basil and added to simmering coconut milk. Still coughing from the huge aroma out of the mortar

About to dig in. . .

It looks very green. Where's the seafood or do you just pour the sauce over? I don't know how your stomach copes with all these rich foods Monk - you must have a tough digestive system.

That sauce/cocomilk/fish sauce is just simmering, the fish/prawns/squid are about to be added with fresh basil etc etc.

Rich? All chilis/scallions/lemongrass/basil/capsicum came from the garden--picked just minutes before!

chilis are very high in antioxidants and are a great soporific

Only the coconut milk could be considered rich. Demi lapped up the last 50ml or so I didn't add to the pan.

And, BTW, the curry is great, a fair but manageable amount of clean chili heat and good flavors from all the other sauce ingredients.

We had an uninvited guest who ate most of the curry then belched all over the place!
