Biscuits, bacon and collard greens
Anyone have a recipe for “biscuits”? Yankee biscuits that is, not cookies!

Yankee Biscuits
Ingredients:
2 cups self-rising flour
1 teaspoon baking powder
1 teaspoon xxx sugar
1 stick butter
3/4 cup milk
(editor’s note, if using plain, all purpose flour, add 1 1/2 teaspoons baking powder and 1/2 teaspoon of salt.)
Method:
In a large bowl, mix together the flour, baking powder, and the xxx sugar. Cut in the butter until the mixture resembles small peas. Stir in the milk just until the mixture is mixed and contains no lumps. Set aside.
Lightly flour work surface and pour dough out onto the floured surface. Knead dough a few times and then roll out the dough until it is about 1/2 inch thick.
Using a floured biscuit cutter, cookie cutter or glass, (I use an empty baking powder can) cut out dough and place biscuits cing onto a non-greased cookie sheet. Bake at 425 degrees for about 10 – 15 minutes. This recipe yields 11 or 12 delicious biscuits.
Serve with fresh butter and blackberry preserves or with honey.

Or fry in bacon grease and serve with bacon and collard greens. Might try oven baking first I think.

Having looked at some recipes, won’t bother with traditional US cornbread, polenta wouldn’t be the right corn meal anyway.

I make these in the bush.
6 tablespoons of plain flour
2 tablespoons of full cream milk powder
1 teaspoon of raw sugar
half teaspoon of salt
dash of powdered ceyane pepper or paprika
sauce bottle squirt of molassas
enough water to make thick gooy mix
pour mix into cast iron frying pan on hot coals or above flames of open fire.
when cooked/baked smother with peanut butter and honey while swearing at flies and/or any other annoying insect.

Just ignore it Heretic - some of us get a bit grumpy at times - although some of the comments here make it quite clear that this is an unfriendly forum.
Your biscuits sound delicious and there's nothing nicer than munching into something sweet cooked over an open fire with a cup of strong tea. When you're living an apparently "civilised" life in polluted air with processed food at your fingertips - you don't get the same pleasure from food.
