Salmon parcels. YUM. Tonight I served mine with "scalloped potatoes" and a salad.



* Scalloped potatoes.

Peel and slice as many potatoes as you think would fill a small oven proof dish in layers.

Ditto with the onions.

Cream and nutmeg.

Layer it .. sliced potatoes, onions, cream mix. Cover with Alfoil for
40 minutes at 200C.

Remove Alfoil and bake for another 30 minutes, till "brown".

I love salmon. I picked up a pack of six salmon fillets on special last week for fifteen bucks.
It must have been Easter surplus.

Have you any idea how good salmon is for you..along with tuna etc?

All my rels who are doctors eat this ONCE a day EVERY day.

Even when we all go out to some restaurant for a family celebration of some sort....these rels always choose the salmon or snapper or Barramundi (in that order).

Funnily enough, they're never sick.

I usually keep a couple of packets of these in the freezer. A couple of minutes in the Microwave, mashed potatoes and a salad ... quick meal and very tasty.

I've got a normal AND convection microwave here. Something tells me I'll need to use the latter for this type of tucker. Would that be right Nef?

Frozen fish, no matter what the quality always has a tainted cardboard taste to it. I buy it supposedly fresh, but even that's sometimes dodgy. Salmon is OK, but it has to be fresh and cooked properly. When you're buying seafood - try to smell it first. There's nothing worse than getting food home and finding it slimy and smelly.

My Greek neighbour ( I may have mentioned her over yonder.. she's the one from Sparta who just turns up and picks whatever she likes from my garden lol )...just dropped off a large oven pan of freshly cooked yemista. She thanked me for all the free veges whilst at it.

It looks exactly like the pic above..except there's twice as much of it.

The Birds Eye Atlantic Salmon are delicious. Fresh as fresh! They come individually packaged in a little plastic packet (there are 2 pieces of Salmon in the box, individually packaged). Pop one into the Microwave for 2 minutes, let sit for 2 minutes and enjoy. No cardboard taste, smell or feel. The packet costs about $10.

I must agree with Mantra though that other fish (such as Dory in a tempura batter) that come 6 to a box and flop around, can have a bit of a cardboard taste. That sort of fish you have to cook in the oven, not the Microwave.
