*Multi-coloured punnets of tomatoes can be purchased from Coles.
*Ensure you use pieces of chicken (preferably the leg) with the skin on.
*Cook with the lid off.
*Place tomatoes in towards the end of cooking after the chicken has crisped.
*Smash down "slightly" the new potatoes so they absorb the juices.




For those who prefer oregano to basal as the base herb, this is a similarly stunning alternative.
