Be brewing this maybe Monday, depends how tiring my walk goes tomorrow:

Christmass ale
Wt g
JW Pils 3000
Amber malt 3000
Musc. sugar 500

Flaked rye 250
Rolled oats 250

OG 1075
100g EKG plug start of boil
28g EKG (2 plugs) dryhop

Spices 15 mins and flameout: cassia 1 stick, star anise 3 stars, cardamom 6 pods, coriander 30g Do NOT substitute cinnamon sticks for cassia sticks!!!

Part mash: 2.5Kg Joe White Pils, the flaked rye & oats, 50 OG points of amber malt (2.5 KG or fuck it and say 3 x 1.5Kg cans Coopers to add 63 gravity units. Add the muscovado sugar near end of boil.

The ale should be dark—long boil rather than black grains. Lovely caramelisation!

Age 7 months before drinking.

Dark, smooth, potent, spicy—just like the Christmass pud. If I can get some Amarillo hop pellets to add at last 15 minute of boil it will have a nice citrusy flavor, mimicking the peel in the christmass pud.

Something like this was my most popular part mash pack (3Kg grain in a small or mini or part mash, two cans liquid malt to bulk it up, topped up to 18L rather than the normal 22 to give it the high original gravity (and high alcohol in the finished beer.)

Adding spices at 15 minutes and again at flame out “fixes” the spice flavor and aroma. The seven months aging reduces hop bitterness which turns into flavonoids and the spices mellow to a nice background flavor.

No.....you have to manually manipulate valves which control the pneumatics. That stuff is amazing. Never took any interest in it until last December, when for reasons inexplicable, darko decided I needed this for Christmas, which is one (the first one) I have also completed...........but it has no engine driving the mechanics:
