Canning is quite easy, stew thge fruit while the clean jars of in a big pan boiling water, fish out a jar, use a jam funnel to fill jar right up, fish out lid, with oven mit or pot holder place lid on jar and tighten, drop jar back in water bath, repeat, jars should be well submerged and left in boiling water of water bath 15 mins.

If you plant cucumbers, it's unlikely to be long before you have too many (I gave away three this arvo). This will use up one or two..
TZATZIKI
1 medium cucumber, peeled, seeded and finely chopped
1 cup of Greek yoghurt
1 garlic clove, finely chopped or grated
1 lemon, juice of half plus zest of whole
1 tablespoon finely chopped fresh dill
salt to taste
Combine all ingredients in a bowl. Great as a dip! Tangy, yet cool and fresh tasting (though your breath may not be as fresh, depending on how much garlic you use ). The lemon zest gives a nice, subtle lemon aroma.

Ahh yes .. my mum makes that all the time. It's very delicious and also very healthy.

It's really more-ish. I made a big bowl of it to put on the table at a staff get-together last weekend (a harbour cruise on the Curtis island ferry). It was a hit, everybody loved it!

We had Greek pastitso tonight.
My awesome Mother cooked up heaps of it this afternoon .. and made a number of nice platters for each of her kids to come and pick up.

Yup, it is a good investment to buy one of those cheffy-type zesters, zesting is quick and no danger of getting any white pith.
