For my Dog Obedience club's trial 24/5, need some sort of cake to go with coffee--another member, former caterer, will bring her commercial coffee percolater. Need some cake or something to sell with the coffee, preferably something that doesn't need to be cut.
Head instructor suggested I make cupcakes but nope, don't do that. Anzacs were also suggested, someone will bring those I am pretty sure. I have decided a nice batch of Dutch cookies, but wouldn't mind doing something else. This is all outside food, no sitting down at tables sort of stuff. Some sort of cake that doesn't dry out quickly, like the dreaded carrot cake etc but appetising and edible
Any suggestions?

Orange or lemon cake made with almond meal. It's very moist and good.

Don't look too bad Ms Hebe, not too bad at all. Should be getting first of the season navels soon so that is very possible.

Hah! Perfect! Muffins! I do have a muffin tin somewhere. Shoudda thought of it earlier.
