Got a new batch of kraut started. Think I have added too much salt in batches 1 & 2. This turns out better, nice crunchy sour kraut I will try kimchi. I have the Korean chili powder.
The kraut I started contains carrot, juniper berries and cumin seed for flavor. Recipe called for garlic, didn’t have any so thinly sliced some ginger. Should be tasty!
Think I will buy the bigger fermenting crock, use the present small one for sourdough starters.
Yoghurt is my next foray into lactic ferments.
