I use an easier version of these sorts of recipes
.......... Ingredient
1 pinch of saffron - Nah
4 cloves of garlic
4 cm piece of ginger
olive oil
1 teaaspoon ground cumin
½ teaspoon ground cinnamon
1 teaspoon ras el hanout - nah
1 tablespoon sun-dried tomato paste
2.5 kg mixed veg , such as aubergines, courgettes, carrots, cherry tomatoes, red onion, butternut squash, mixed-colour peppers
1 x 400 g tin of chickpeas
100 g dried apricots - nah
1 preserved lemon - nah
300 g couscous
½ a bunch of mixed fresh herbs , such as dill, mint, flat-leaf parsley (15g) - nah
20 g flaked almonds - nah

Chicken Biriyani
750 grams of chicken thighs/breast
2 cups of basmati rice
2 cups of chicken stock
1 large brown onion
1 teaspoon of ground cumin
2 teaspoon of ground coriander
2 red chillis (smaller the better)
1/2 teaspoon tumeric
2 star anise
1 stick of cinnamon quill
1 small piece of ginger
2 cloves of garlic
Chop the onion roughly.
Chop the ginger and garlic finely.
Chop the chillis roughly
Fry the onions, garlic, ginger and chilli.
Once the onions turn translucent, add the dry ingredients and fry for a few minutes.
Slice the chicken and add to the fried spices and coat liberally.
Add the rice and the chicken stock. Cover and allow the moisture to be absorbed by the rice. Stir occasionally until it is all absorbed.
Serve!
