Hash Browns -
I'm gunna make some - I need to buy some flour.
Ingredients:
• potato – 14 oz | 400 g
• onion – 2 oz | 50 g
• all-purpose flour – 2 tbsp
• 1 egg
• red chili flakes – ¼ tsp
• ground black pepper – ⅓ tsp
• salt – ⅔ tsp
• vegetable oil – 3 fl oz | 80 ml
You will need:
* 2 bowls
* grater
* pan
* carving board
* cheesecloth or cloth napkin
Preparation
1. Peel and shred the potatoes, leave them in a bowl of cold water for 5 minutes.
2. Chop up the onion.
3. Rinse the potatoes in cold water twice, place them in a clean cloth napkin or cheesecloth and squeeze out any excess liquid.
4. Lay the shredded potatoes in a bowl, add chopped onion, spices, flour and an egg, mix well with a fork.
5. Heat a pan over medium heat, take a spoonful of the mixture and form the pancake-like hash browns in the pan, fry them on each side for 4-5 minutes.
6. Serve hash browns hot with ketchup, sour cream and sauces.

My mother used to make great hash browns from leftover roast potatoes.

You need freshly grated spuds to make them properly.

I've been spoiled these last few months. Been doing just two short shifts dishwashing at a top restaurant for pocket money and to help out the owner friend. The head Chef is unbelievable! Kangaroo lasagne! Sweet Scallops! I've never eaten better in ages.

Sounds like a great friendship too. My eldest daughter’s started a charity in Ballarat and over the last year, we've been inundated with things you wouldn't believe, what major supermarkets and food companies/retailers donate is incredible.
If my daughter’s able to assist the community this way, why do some of these alleged charitable organisations offer scraps, absolute rubbish or nearly expired foods you would give to pigs/chooks to the community?
They should be ashamed of themselves.
So much waste, and so many desperate people going without in one of the richest countries in the world, Australia.

I know. I'm finishing up at the Restaurant as its now the quiet part of the year. They've just got a new young dishwasher to replace me next week. The restaurant at times does 'free lunches' or 'free dinners' if the food is 'almost' expired that can produce a meal. It's done for special needs groups and those selected as 'battlers' (not bludgers). Almost expired is not 'expired', but they don't charge top dollar like they do for the 'fresh'/new, but they don't throw it out as waste either. The best things in life are free!

We had a very basic dinner tonight.
My daughter loves simple meals, she's a fickle eater.
Curly lamb chops, ( 2 each, and 1 for our little man, our cat) but I could easily have eaten 10 lol) peas, Nanna Bete potatoes and carrots (slightly honeyed) and Tom sauce + fountain thick mint sauce. She likes Tom sauce, I like mine with both. Basic, but adequate.
Was going to make my mums bread & butter pudding but we both decided playing an online game together after dinner was probably a healthier option as we went to a birthday party last night and spoiled ourselves, desert wise. With lamb chops with curly crispy tails being a tad unhealthy/fatty I try to keep desert healthy , ie, a piece of fruit from bowl if we get peckish later on.
I'll probably sneak out and have icecream when she's asleep later on unless I'm asleep myself.
I know that we should chop the tails off, or trim curly lamb chops at least, but let's be honest, this would be chopping off the best bit. So....
