I have a pork roast to cook but I'm still waiting for my oven to get fixed. Probably pasta something. I'm not a huge fan of pasta but I don't do it often so that's fine.

My son had a Brazilian girlfriend who used to do a pasta dish. Cook the pasta, bung it in a big bowl and add lots of grated cheese, ham and deseeded sliced tomatoes or halved baby cherry tomatoes. Bind it all together with some Japanese Kewpie mayo.

I'll probably do that.

It's really good.
They sell you a personalised menu. It has all the ingredients and directions for every meal for 2+ weeks.
Breakfast, lunch, dinner and snacks.
It's just food you can buy locally, in woolies. Took me a while to get used to buying different things.

The food is really nice, it does not 'feel' like a diet. We are not deprived or hungry
I've lost 7kgs, my wife over 15. It is a big difference

What a wet topic!

Tonight will be a cold table: two pates, sashimi and sushi, sausage etc plus some side dishes. I know, bit cold for a cold table, oh well.

This weekend I want to make croquettes, a recipe out of a Dutch cookbook I have, fish and veal (separate, not together LOL!) Have a stock started with four ocean trout heads, herbs, soup veg etc.

Just out my current batch of apple butter into the waterbath, process that 10 minutes (likely in Tassie I will need to allow for elevation, have my eye on a block just under the snowline and higher elevation = lower boiling point. In Tassie I will likely use a pressure canner.

Anybody here into lactic ferments? Sauerkraut, kimchi, yoghurt, gherkins? Have a small batch, my second, of sauerkraut fermenting on the windowsill in the kitchen (in a fermenting crock on the windowsill natch, not got a heap wet, salty cabbage on the windowsill.

Looking to make yoghurt and kimchi next week, any hints welcome!

Apple butter is nice, creamy not grainy. Not much taste of spice tho I added what I thought were heaps. It is nice and tart, must be the “missile” apples.

Hmmm nope:
This miniature apple has a small core, super sweet flesh and thin skin making it a great addition for kids' lunchboxes.
Must have been the grannies. Anyway, all canned, will fish the jars out the waterbath in a few minutes.

I have fried pork chops in apple butter, man that was good! Apple butter way more concentrated than apple sauce.

Might look for a recipe for a tart with applebutter.
