We eat preserved food everyday. Modern day conveniences offer canned goods, even deep freezers for meat and vegetables. What about 250 years ago. How did folks make it by in times of drought or through a harsh winter?

Modern delicatessen Gravlax can be translated to "buried salmon" or even "grave salmon" which refers to the medieval method of curing the raw fish by burying it in the sandy soil to ferment, often right on the beach in sand just above the high tide level.
It was ok to do it in cold climate but here in warm Australia fridge is the go.

Heavy vacuum simulates sand pressure the rest is just like in old hard days.
